Just like mom makes: a traditional apple pie

Looking for some culinary inspiration this Sunday?

Birmingham Living magazine's 'chefs corner' recently featured a traditional apple pie recipe from our very own Edwards Restaurant.

Easy to prepare - and seriously yummy - it's a firm favourite that will get the family flocking round the dining table.

Method
  1. Place the sugar, flour and lemon zest into a bowl and rub in the butter until the mixture resembles breadcrumbs
  2. Add 1 egg and stir until the mixture forms a dough
  3. Set aside a third of the pastry for the lid. Roll out the remaining pastry and lower into a pie dish.
  4. Mix the cornflour, sugar and cinnamon in a large bowl, then stir in the apples.
  5. Place the filling into the pie dish, brushing the rim with the beaten egg.
  6. Cover the pie with the remaining pastry and press the edges together firmly to seal.
  7. Make a few small holes in the centre of the pie and glaze the top with the beaten egg.
  8. Heat the oven to 200C / 180C (fan) / gas mark 6. Sprinkle the pie with sugar and bake in the centre of the oven for 50 minutes or until golden brown.
